Plum and Green Bean Stir-fry

INGREDIENTS
- Take 1 cup long-grain brown rice
- 1 tablespoon vegetable oil
- 3/4 teaspoon salt
- 1 tablespoon chopped ginger
- 1/4 teaspoon freshly ground black pepper
- 1 small hot red chile (like cayenne), chopped
- 1 tablespoon curry powder
- 1/2 cup unsalted, roasted cashews
- 4 scallions, white and green parts separated and sliced
- 4 cups trimmed, halved green beans
- 3 plums, pitted and cut into small wedges
- 1/2 red bell pepper, sliced
- 1/2 cup reduced-fat coconut milk
PREPARATION
You have to take the saucepan and put ¼ cups water,rice and ¼ tsp salt. You have to cook on low heat and also cover until the rice absorbs the water inside the saucepan. This process will take 30 to 35 minutes. After 35 minutes take off the cover and turn off the heater. Heat the oil on medium high heat in a large skillet.
